Ostra Regal Selection OR

The Selection Or is the quintessence of our production. It represents less than 5% of the annual Ostra Regal production.

This exceptional oyster is obtained after three sorting stages carried out at different stages of production. The first stage takes place on the parks where the Boutrais Family teams select the best batches, usually those most exposed to marine swell. Then, only the heaviest oysters are retained during calibration.

The last stage takes place during packaging, where only the roundest and most bulging oysters are kept, two characteristics that promise a very high meat ratio. The oysters are then shipped with 22-carat food gold flakes on them, which allows them to be identified and distinguished for their quality once displayed in restaurants. While some may see it as a gimmick, others will see that the real treasure is inside.

The drop-shaped, round and bulging shell contains a meaty oyster with an immaculate white muscle contrasting with the dark ends of its mantle.

Just like the Ostra Regal, there is a salty and rocky attack, giving way to a powerful flavor. But the taste of the Selection Or is even finer, making this product a luxury dish. It is a crunchy and sweet oyster with a slight hazelnut taste.
