We exclusively use fish fillets. Preparation before serving is essential: sardines and mackerel are trimmed (peeled and boned) by hand before being incorporated into our recipes. Choosing to leave distinctive pieces of fish adds texture to our dishes, such as rillettes.

We ensure the balance of our recipes and flavors by choosing the best combinations, such as for flaked fish, with a choice of seaweed based on the character of the fish used.

We offer a wide selection of seafood rillettes, such as plain tuna rillettes, with tarragon, or with wakame seaweed, our mackerel rillettes with lemon zest or fine seaweed, our sardine rillettes with cumin and coriander, our salmon rillettes, or even scallop rillettes with sherry vinegar.
