Terroirs
Soil : Mainly sand and clay. This is a small area in Châteauneuf du Pape appellations with no rolled stones. This area brings more finesse and elegance to the wine.
Climate : Mediterranean, warm and dry, the region is windy and Mistral keeps the leaves and vines dry after rain falls.
Winemaking
Manual harvesting and grape sorting at their arrival at the chai.
Grapes are Destemmed and crushed, and put in concrete vats for fermentation. This is a spontaneous fermentation with no use of industrial yeasts. Maceration longs for 3 weeks under 30°C with short pumping over.
18 months aged in vat.
